Weed Infused Tomato Soup

One of our childhood favorites, although without the "special" ingredients, you really cant go wrong with a delicious bowl of steaming Tomato soup. Healthy and filling and a great way to medicate, here is our alternative recipe:


1.5 Kg soup-ready fresh tomatoes

1 tablespoon lemon juice (or juice of half a fresh lemon)

2 cloves garlic - finely chopped - OR 1 teaspoon garlic flakes OR a pinch garlic powder.

2 teaspoons salt

1 pinch black pepper

3 tablespoons canna oil or 50g canna butter (melted)

3 tablespoons balsamic vinegar


The best tomatoes for soup are the ones which are just about on the point of being over-ripe, in fact tomatoes which have split are definite candidates for making soup.  In principle you can make this soup with less ripe tomatoes or drained canned tomatoes, but the flavor will be reduced.ripe-tomatos

Slice or chop the tomatoes as you find easiest.  They’ll be going in a blender later so it’s fine if your cutting is a bit rough and ready.  Put them in a bow with the lemon juice, garlic, salt and pepper.  You can adjust the flavorings to suit your taste, but unless you really love pepper, it’s probably best to stick to a maximum of half a teaspoon.  Also be aware that garlic powder is much stronger than garlic flakes, hence the smaller quantity.  Leave to marinade for at least 2 hours, if you can manage 3 or 4 that’s even better.

When you’re ready, put the marinated tomatoes in a blender with the canna oil/canna butter and blend until the texture is how you like it.  You can serve this soup chilled or hot.  Good additions/garnishes include onion (preferably red), parsley and crumbled feta cheese.
