Thanksgiving is a great time filled with lots of family and friends and of course, a ton of food. To make it even better, why not infuse some of that food with some high quality cannabis? This pumpkin pie recipe is a great way to do it and a sweet type of edible that all your friends will enjoy!  

Ingredients

The ingredients needed for this cannabis infused pumpkin pie are very simple. And while you could simply purchase a store-bought crust, one of the best things about Thanksgiving is enjoying homemade food made from scratch. That includes everything down to the cannabis crust. The few ingredients you’ll need are found below.

For the crust:

  • 1 1/4 cups cake and pastry flour, sifted
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 7 tablespoons vegetable shortening or lard, very cold and cut into cubes
  • 1 tablespoon cannabutter, very cold and cut into cubes
  • 1/4 cup ice water

For the filling:

  • 8 ounces of cream cheese, room temperature
  • 2 cups of canned pumpkin
  • 1 cup of sugar
  • 1/4 teaspoon salt
  • 1 whole egg
  • 2 eggs yolks, lightly beaten
  • 1 cup of heavy cream
  • 1/4 cup of cannabutter 
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

For the whipped cream:

  • 3/4 cup whipping cream
  • 2 tablespoons confectioner’s sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cannabutter, melted and cooled

Method

Once you’ve gathered your ingredients, making homemade pumpkin pie and turning it into a delicious edible is easy. Just follow the few steps below for a Thanksgiving treat everyone will enjoy.

1.) Preheat the oven to 350 degrees Fahrenheit and ensure the racks are in the middle.

2.) To make the crust, place the flour, butters, sugar, and salt in the bowl of a food processor. Pulse a few times until the butter is broken up into small pieces. They should look like small pebbles.

3.) Slowly add the ice water and continue pulsing just until the dough forms a ball. Remove the dough from the food processor and continue forming into a smooth ball. Wrap in plastic wrap and refrigerate for about 30 minutes.

4.) Once the dough has firmed up in the fridge, flour a counter top or other work surface. Roll the dough out to about 12 inches, working from the center and moving out towards the edges.

5.) Place the crust into a pie pan. You do not need to butter the pie pan, there is enough fat in the crust to keep it from sticking. Do press down lightly on the crust, on the bottom and up the sides. Place the pie pan into the fridge to allow it to set up once again while you make the filling.

6.) Place the cream cheese into the bowl of a stand mixer, or a bowl that you can use to beat with a hand mixer. Beat the cream cheese until it is light and fluffy.

7.) Add the canned pumpkin to the cream cheese and beat just until combined. While mixing, scrape down the sides of the bowl to ensure all ingredients are incorporated.

8.) Add the sugar and the salt and mix again. Then, add the whole egg, the egg yolks, heavy cream (not the whipping cream), and the melted canna butter. Beat again until everything is combined together.

9.) Add the vanilla and cinnamon. Beat the mixture one last time and pour into the prepared pie crust.

10.) Place the pie pan onto a baking sheet and place in the oven for 50 minutes.

11.) After the pie is finished baking, remove from the oven and allow it to cool to room temperature. Once at room temperature, cover with plastic wrap and place in the fridge to chill completely.

12.) While the pie is cooling and chilling, you can make the whipped cream. This is best done shortly before you’re going to serve the pie. Otherwise, the cream is likely to deflate and melt.

13.) Place the whipping cream into the bowl of a stand mixer, or a bowl you can use with a hand mixer. Add the confectioner’s sugar and vanilla and begin beating until the cream forms soft peaks. Add the melted butter and continue whipping until the cream forms stiff peaks.

14.) Remove pie from the fridge and slice into wedges. Place a dollop of the cannabis-infused whipping cream on top, and enjoy!
